Dear Soy Users,

The Soy YKS-Class Dome-Lidded Sahans are one of the most important showcases of the Soy craftsmanship and dedication to quality.

The Base pan consists of a solid hand-hammered 2mm pan, that can withstand heavy-duty cooking while the lid is a heavy-gauge 1.5mm dome, that perfectly distributes the heat inside the pan, just like an oven would do.

This domed pan is the sine-qua-non for some of the slow-cooked Turkish and Middle-Eastern specialties, like the Tas Kebabı (if having the required Tas piece of cookware), or for serving meat dishes at the ideal temperature.

 

Their build actually tells about their function;

As the whole product is built from Solid Copper, the heat that is received from the bottom is circulated to the top, acting as an hemispheric dry convection oven, that in turn locks the flavor pf the ingredients, giving a perfect finish to all food cooked in it, without ever needing to turn anything (unlike a Tagine where the top stays cool thus creating a microclimate, the Sahan transmits the heat from the top -in a a parabolic fashion- as well, and the result one would get will be a perfect roast, not a braising).

 

Once the cooking is over, the Sahans will also look gorgeous at your tabletop!

The larger sizes, such as the YKS24 and the 28 can accomodate an entire chicken or duck.

The handle topping the dome is wax-cast bronze with a perfect finish.

All hammering is entirely done by hand, no press or even spinning is involved.

Thickness: 2 milimeters

Tin Lining: Hand-Lined, lasts more than a few years, can be a lifetime if used properly, free lining offered yearly for lifetime if shipped back to the production facility. See warranty details with the actual product.

Use:
  • Please contact us for use on induction
  • Do not use your Soy in the microwave, copper & silver are metals after all!
  • Do not use metal utensils or scratch your Soy as it will remove the platingHand-wash your Soy and do not put in the diswasher.
  • * Use mild dishwashing soap and do not use metal sponges or the green side of the sponge
Care
  • Given the nature of the metal, both copper and silver will change color and tarnish as they get used & upon contact with air, water, and acidic ingredients.
  •  This is totally normal and doesn't affect cooking properties.
  • They are still safe to use and there is no health risks.
  • If you want to get them back to their original state, just rub your Soy with a lemon sliced in half, covered with table salt or baking soda.
  • Rinse it with warm water, dry it and voila!
  • As with cart-iron skillets, a light coating of oil before storing protects it over time.
  • This method works on both copper and silver.
  • You can also clean your Soy with ashes (cigarette ash, fireplace ash, etc.).You can also always use food-safe silver polish.
  • We recommend brands like Hagerty or Goddard's.
